Fermented and aged in a special concrete egg shaped tank that duplicates the ancient stone vats of Europe. One of the most important things during fermentation is temperature control and the egg stabilizes the temperature and allows for a smooth fermentation. In addition, since concrete is porous it allows micro-oxygenation to occur which adds some minerality and softens the wine for a smoother finish. Majestic, dignified, almost theologically mysterious.
